One-Pot Lentil Stew: A Simple, Nourishing Meal for Off-Grid Living

Ingredients:

  • 1 cup dried lentils (any variety)

  • 1 large carrot, diced

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 1 can diced tomatoes (14 oz)

  • 4 cups vegetable broth (or water)

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • Optional: fresh parsley or cilantro for garnish

 

Instructions:

  1. Prep the ingredients: Dice the carrot, onion, and mince the garlic.

  2. Heat oil: In a large pot or Dutch oven, heat olive oil over medium heat.

  3. Sauté veggies: Add diced onion and carrot, cooking until softened (about 5 minutes). Add garlic and cook for another 1-2 minutes.
